Mao Xie (Hairy Crab)
A Se Chung Oolong, also known by its Chinese name, Mao Xie.  This tea is perfect for the cost conscious, who want to have an oolong with some character that doesn't taste like cardboard.  Medium bodied, with notes of gardenia, butter and honey.

Brewing Suggestions: This tea can be thoroughly enjoyed in a western style teapot or in a porcelain gaiwan. 
We recommend using spring or filtered water.  Heat to 195F/90C. Use 2.5g / 1.5 tsp of tea for 12 oz of water. Steep 4-6 minutes.
Fill your vessel up from a third to half the way (1g of tea per 1 oz).  Using water fresh off the boil, steep first for 30 seconds.  On the second steep, shorten the steep to 20-25 seconds.  Then increase 5-10 seconds on each following steep.
